Egg Meatball

I tried this recipe a while ago for our dinner and it's just like meatball but there's egg inside:) I altered some ingredients for more taste! My family loved it!!!this one is yummy try it :)
*******Egg Meatball*******

Ingredients:

6 hard boiled eggs

1 lb. ground beef/ground pork/ground turkey

1carrot, diced

1 Chinese celery/kinchay or regular celery is a substitute, chopped

1 egg, beaten

1 small onion, chopped

Salt and pepper

Flour for coating

Bread crumbs for coating

3 eggs, beaten

Procedures:

1. Mix ground beef, carrots, celery,onion and 1 beaten egg, season with salt and pepper.

2.Wrap the hard boiled egg with the meat mixture and form like a ball.

3.Dip egg covered with meat mixture in flour, then dip in beaten egg and roll in breadcrumbs.

4.Deep-fry until cooked through temperature should read 170*F.

5. Serve w/ rice . I love it with ketchup mixed w/ hot sauce! lol

Pan de Sal

Uhhh for some reason, I woke up today craving for pan de sal! well, it's not easy for me here there's no Filipino bakery !! so I grabbed a recipe online & I made my own pandesal :) hehehhe I'm telling you making bread is not very easy since you have to do all the hassle and the waiting! but definitely worth it!!! try thsi one ang sarappp!!! o di ba maam carlota himo jud ko akoa no? hahah

**Pan De Sal**

Ingredients:

8 cups plain flour
1/4 tsp salt
1 cup sugar
1/2 cup cooking oil
2 1/2 cups cold water
1/2 cup lukewarm water
1 Tbsp yeast
bread crumb for topping/garnish

Procedure:

1.In a small bowl, combine the lukewarm water, 1 tsp of the sugar and yeast.

2.Let stand for about 15 minutes in a warm area. By this time it will be foamy;stir.

3.In a big bowl, mix cold water with oil, salt and the rest of the sugar.

4.Stir until sugar and salt are dissolved.

5.Add the yeast mixture and 1 cup of the flour. Stir to combine.

6.Add the rest of the flour a cup at a time.

7.Mix with a wooden spoon until dough pulls away from the sides of the bowl.

8.Knead the dough on a floured surface until smooth.

9.Sprinkle flour every now and then to avoid sticking
10.Put in a greased bowl and turn to coat w/ the oil.

11.Cover and let rise in warm place for 2 hours.

12.Punch dough and turn out on a floured surface.

13.Divide and roll each into logs.

14.Sprinkle breadcrumbs on the surface and roll logs into breadcrumbs.

15. Cut into rolls and arrange in greased baking sheets.

16.Cover with a damp cloth and let rise for 30 minutes.

17.Bake in a preheated oven of 400*F for 13-16 minutes.

18.Remove from baking sheet. Serve w/ butter.

For make ahead, you can fix the recipe the day before and just cover & refrigerate then for the next day, just thaw for 30 minutes then bake.

mid of May

aah time goes fast huh??this is the way I like it lol!!! I have been busy doing my presentation for my class & i still have to do it lol although I got all the materials, it still need editing! so I will be doing it here in a little while, I just thought that I should post at least one in my blog aside from food lol! don't worry there will be lots of food recipe coming up I got the pictures uploaded already in my Photobucket acct. :)

Well, Saturday, we went to Omaha &helped our friend Bruce load the moving truck with all his possessions since he is now officially a Floridian so he just left us!!!!!well, I can't blame him hello Florida weather is so much better than our weather! Bruce has been our friend ever since we moved from TN to here & he got the job the same time my Hubby got the job! but we wish him all the luck! may he find someone there for him:)

Moving on, we purchased a yearly pass to the Lincoln Zoo last week and guess what now?? my kids are bugging me to go to teh zoo everyday????? I said no! I can do it once a week but seeing my relatives everyday?? I will not do that not at all hahahaha but we went the day after I bought the pass. I think it's kinda cool since the pass allow us to go everyday if we want to! and we only paid once! never pay another fee even @ the boo at the zoo week on October. The pass also allow us to get discount from another zoos. pretty cool huh? but I told them we will go once every week to see their twins! here's some pix!

We bought the kids, a small blow up pool for them to swim when it gets so hot outside! They love that thing. We will take them swimming @ the lake when we get a time off to go somewhere. maybe this year we are just going to Mahoney state park since they got cool stuff over there we went there once on Mother's day & maybe we will wait til my mother in law gets here.

I have been trying new recipes like that Beef Kaldereta I posted the other day, I don't have any goat meat near me so I used beef. I always like Beef kaldereta if your in the Philippines & you get a chance riding in Superferry that goes to Manila try their Beef Kaldereta wow yummy! although I don't think that you can get it in the buffet but try ordering it anyway that's what I did when I live in Philippines back then, and I get to visit my relatives in Manila I always order it when I aboard the ship! I also made Coconut Macaroons the only difference that I noticed is that the coconut macaroons that I tried in Cebu has more flour on it than the recipe I tried last week.

Last Friday, my husband took the half day off so I can get into lab Catching up! I got checked off on most of them & Tuesday, I got checked off on everything yo ho!!! I'm on sched except of course for the Blood pressure hahaha well, I'm not alone on that one! most people in my class didn't get check off coz we don't feel comfy yet to get check off with that we need more practicing! My mother in law will send me my own BP cuff ans Stethoscope to practice @ home!
Am I not the lucky daughter in law or what????? According to my school calendar, we only got 3 classes left for lecture then lab catch up on the 5th of June then we will start our Clinicals on the 7th!! wow!!! I am so excited!!!I get to wear all white clothing which is not really my favorite color! lol! yeah, my new teacher is so much cooler than my first one. don't get me wrong I do like both of my teachers but Diane is more laid back than Becky but then again Becky was pregnant then so you know preggy women has mood swings so I can't blame her for that! but Diane I think is just more laid back & one of the coolest teacher I have! Oh Yeah my teacher Beck just had her Baby last Tuesday, she delivered a baby boy who is 9lbs and 14 oz.!!!!!! that's a big baby! he is 1 lb. bigger than Ethan when I delivered him. so congrats to her!!!

Beef Kaldereta

I made this one last Friday and my family loved it! Even my hubby loved it & there's liver in this recipe and he didn't even notice it! of course I wouldn't tell him he liked it so no reason that he will know I actually put liver in this recipe lol he swears up & down that he will never eat something with liver in it lol! Anyway, here's the recipe! enjoy!

****Beef Kaldereta****
Ingredients:
2 lbs. cubed beef ( for stewing)
4 medium potatoes, quartered
1/2 cup green peas
1 red bell pepper, cut into strips
1/4 cup cubed beef or chicken liver
3 cloves garlic, finely chopped
1 small onions, sliced
1 small can tomato sauce
1 tbsp. hot sauce
1 tbsp. sugar
1 bay leaf
1/4 cup olive oil
1/4 cup water
msg, salt and pepper for seasoning
For Marinade:
3/4 cup vinegar
2 garlic cloves, finely crushed
dash of salt & pepper

Procedure:
1. Marinade beef w/ vinegar, crushed garlic and salt & pepper for 20-30 minutes.

2. Fry quartered potatoes until tender. Set aside.

3. Fry meat until both sides are brown & tender.

4. Add onions, olive oil & bay leaf mix well. simmer.

5. Add red pepper, garlic, tomato sauce mix well.

6. Meanwhile, fry beef liver in a small saucepan, season w/ salt if you want. When done,
transfer to a blender or food processor, add 1/4 cup water & blend until pasty.

7. Add liver paste to the beef mixture & mix well. simmer for 5 minutes.

8. Add green peas, sugar, msg,hot sauce, salt and pepper. mix well. Simmer for another 5
minutes in low heat. Transfer in Serving bowl and serve.

pondering!

hello folks how's your weekend? As I had fun on my Mother's day weekend, we ate dinner @ the park behind our house & Sunday, we went to Mahoney State Park in Ashland about 30-45 minutes drive from Lincoln. We are planning to spend our Summer vacation in Mahoney but I doubt that we can afford staying in their cabins or one of their tree houses! it cost $150 + and up to stay in those beauties! can't afford!!! and besides it's only 30 minutes away from our house we can just drive every day & still have the fun! I think we will be back on July when hubby gets the weeks off! Anyway, we didn't do much on Mahoney Park last sunday coz some of their services are closed! We cna go horse backriding but they wont allow under 6 though! and there's no double riding either so maybe we will do turns . They have pony rides for kids but it wasn't available last Sunday. We played putt 2x golf I forgot if it was 18 or 20 holes in it! Elena didn't play but I let her hit some & she kept taking my ball off the greens! which gave me the opportunity to cheat a bit lol! I think they all knew they just gave me the slack since it was Mother's Day !
It was so hot that day & i thought I wouldn't be enjoying it since I break out every time it gets hot but lucky for me it was also windy!!! I break out when it's hot & dry! After that we went paddle boating! I got to navigate the thing but dang it was more like an exercise for me lol!!!! which is good for me I guess! but you got to be on it for 30 mins. We just drove all over the park after that since it was getting late. We drove around to find the camp grounds. We are planning to camp out on summer. There was a lot of RV's Tents, they have different designated areas for each one! The Mahoney park also has water park in there so people get to cool down!
you can also fish in there. They also have their own groceries, fish cleaning areas, an elegant restaurant & much more! I can't wait til summer hopefully i don't break out though lol! that would be a bummer!
Anyway, Rocky had to cancel his trip for class purposes since I still am in school but he moved it @ the later time so maybe we can go with him since the kids will be off from school but it's not far it's in Iowa I think it's the next state but hey,it's better than nowhere!
I have to go to class this afternoon, I think we will do lectures & Thursday is on lab. I will be going on Friday too since I will be catching up some lab works! I still have to do bed bath & partial bath! Bp & pulse lol! well, they didn't gave us enough time to finish it! While we practice on something our teacher will start yapping about another one while u'r still practicing on a different one that she just demonstrate us! she must think we got super powers and she rush into teaching since she's going to be out for baby delivery! but dang she don't have to rush us just bec. she will be off! she's not the one who needs learning we are! but whatever!
Anyway, I tried to upload pix but god it just takes forever so I decided to just do it slide and post it here lol so here it is enjoy the pix & have a good day everyone mwah!!!!!

Hello everyone! it's good to be back! I have been busy yapping, and merging my blogs! finally with the help of Ms. Carlotz I'm finally done!!! Managing 2 blogs is not for me since it gets annoying and i don't have too much time to spend updating in those two! why just not do 1 and spit all my yapping in this site huh??? I had to move on to new blogger since this Drama was on the new blogger but it was on a classic template! Carlota has been pulling my sleeve to move on to new blogger! And so I did it took me a while to comprehend but I got it somehow hahaha! My chow was transfered to the new layout for the new blogger but I didn't want to move my drama over there coz hello I don't wanna be posting my last year's yapping to the new one! so it was appropriate to move my chow to my drama! di ba?

Nothing much happened to me just getting crazy in lab! learning how to get vital signs & some other stuff! I have a hard time doing blood pressure!!!! It's lab day today so we have to brush each other's teeth lol! Last Tuesday, we had a lecture about Stroke & Alzheimer's disease. It was actually very interesting yet scary! scary that it can happen to me! My teacher told us what happened to her old patient who has Alzheimer & she said she acted like she 's like for months bec. her brain erase the current memory & led her back on her childhood ! she had no idea that her husband was long gone and she didn't know what's the current year and what had happened to her for the past who knows how many years she had suffer! if you saw The Notebook that was one example of how horrible Alzheimer is and also what happened to Meredith's mom in Grey's Anatomy! anyway here's some info for you.

Last Sunday, We went to Seth's Graduation & it was pretty fun! and the food was yummy! His wife prepared thsi stuff that tasted exactly like Lechon kawali! She told me that she will bring me some seasoning when she gets back from Puerto Rico. I wanted to go with her & she said yes since she will be going by herself! if only My hubby will take a week off to watch the kids hahah!
Me & my hubby has plans to visit Puerto Rico & maybe someday we can go! We didn't took some pix since silly me forgot the camera while we were looking for the invitation w/ the map on it! we couldn't find it so we just went to Mapquest & got us a direction to Sprague NE.. no definite address but we just drove until we found the community center that's where they held his party!
We've been having hard rain & thunderstorms here in NE! well, I kinda like it since I get heat rash when it's freaking hot outside! my face is getting better but my neck still itchy !! wahhh!
We've been going to the park almost everyday after I drop and pick up Ethan & Shaun to & from school! we had lunch & sometimes bring snacks in the park! I like the place a lot! We usually have a blanket in my car ...in case I feel like park hopping lol! we also brought books to read & let the kids play & chill!
I feel like trash today! Shaun woke me up a bunch of times complaining that he will be late! haha
Ethan didn't have to go to school today coz of some communication days for pre-schoolers! Finally I woke up @ 7:47 ! you should have heard Shaun telling me that everytime he woke me up & my only response was okay & sleep again! I'm tired from last night.. struggling merging lol!

Escabeche!

Ingredients:
* 3 medium or large fish ( any kind)
* 1 large onion, thin slices
* 2 carrots, strips
* 1 cup grated papaya (unripe)
* 4 cloves garlic, crushed
* 1/4 cup ginger strips
* 1 cup vinegar
* 1 tbsp. salt or soy sauce
* 1 cup brown sugar

Procedure:
1.Clean fish. Rub salt and pan fry. Set Aside.

2. In a pan, mix together Vinegar, brown sugar & salt or soy sauce,blend well. boil.

3. Add in garlic, onions, ginger & carrots until tender crisp.

4. Pour in the prepared fish. serve!

Fruit Salad

Ingredients:

1 can Nestle Table Cream ( can be found in Asian store & @ Wal-mart)
1 pkg., ( 8 oz.) Philadelphia Cream Cheese
1 can Pineapple chunks
1 can Del Monte Very Cherry Cocktail or regular fruit cocktail
1 apple, diced
2 bananas, sliced
2 Mangoes, cubed
1 bottle Coconut Strings( Macapuno)
Procedure:
1. In a large bowl, beat cream cheese & table cream together until fluffy.

2. Add apples, mangoes & banana. Mix Well.

3. Add in Pineapple Chunks & very cherry Cocktail. Mix well.

4. Add the Macapuno then mix well.

5. Chill for 2 hours or overnight.

Ampalaya Guisado

Ingredients:
1/4 cup sliced onions
3 cloves garlic, finely chopped
1 tbsp. finely chopped ginger
3 Ampalaya ( bitter melon) seeded, and sliced crosswise
3 tbsps. salted shrimp fry
4 boneless pork chops, diced
Procedure:

1. Fry pork til brown.

2. Add onions, garlic, ginger and ampalaya.

3. Stir in Shrimp fry and mix well.

4. Cook until tender crisp.Transfer in serving dish & serve!

Cheeseburger Bites

I tried this recipe when I hosted my friend Lesa's baby shower last year & everybody liked it!!!:)
it's so easy to make & your intestines will burst once you heard all the nice compliments hahaha!!! seriously!!I got this one from Kraft Foods Magazine.

Ingredients:

1/ 2 cup Honey BBQ sauce or orig. BBQ sauce
1/ 4 cup grape jelly
24 pieces small prepared frozen meatballs
1 can ( 8 oz. ) pineapple chunks, drained
1 large red bell pepper, cut into cubes
24 pieces cubed cheese ( Colby, cheddar or pepper jack)
24 bamboo skewer or toothpicks



Procedure:
1. Mix BBQ sauce & jelly in a large skillet.

2. Cook & stir on medium heat for 2 min. or until jelly melts.
3. Add meatballs to skillet; cook for 10 min. or until heated through.



4. Skewer each meatball alternately on wooden skewers or toothpick w/ pineapple chunks, red
pepper & cheese.

Enjoy!
*You can also add onions & some other cubed fruit of your choice.***

Tangy Pork Chops

Yesterday , I tried to make a Pork Afritada, how ever I ran out of pineapple chunks well, I just use one can of Basil & Oregano Diced tomatoes in can and man oh man it tasted good!

Ingredients:
2 potatoes, sliced
2 carrots, sliced
half cup of each red , yellow & green bell pepper, cut into strips
1/4 cup chopped onions and garlic
1 can Del Monte Diced Tomatoes Basil & Oregano flavor
dash of salt & pepper
4 pc. pork chops

1. In a skillet, brown pork chops turning both sides. Set aside.

2. Saute garlic & onions. Add potatoes til tender.

3. Add pork chops and toss for 5 minutes .

4. Add the bell peppers,carrots, salt & pepper and mix well.

5. Pour the tomatoes and mix well. Simmer for 5 minutes .

French Veggie Omelet

I make this one when I get up in good mood! I got this one @ Better Homes & Garden Book.

Ingredients:

2 eggs
1 tbsp. water
1/8 tsp. salt
garlic, onions
mushroom
yellow, red bell pepper
shredded cheese
dash pepper
diced tomatoes


Procedure:
1. In a bowl, combine eggs, water salt & dash of pepper. Using a fork, beat till combined but
not frothy.Spray a cold 8-10 in-inch nonstick skillet w/ flared sides w/nonstick coating.

2. Add egg mixture to skillet; cook over medium-heat.

3. As eggs set, run a spatula around the edge of the skillet,
lifting eggs so uncooked portion flows underneath.

4. When eggs are set but still shiny, spoon the filling across the center of the omelet.

5. Loosen the edges of the with spatula.Fold one side over the filling.

6. Repeat with the remaining side, allowing the edges to overlap.

Parmesan Wedges

I ran out of French Fries so I just had to make my own with a lil twist!

Ingredients:
4 potatoes ,peeled
1/ cup Parmesan cheese
2 tbsps. black pepper
2 tbsps. crushed red pepper
1/2 tsp. salt
1/4 tsp. dried oregano

Procedure:

1. Wash potatoes, cut into wedges.
2. Season with salt, peppers & oregano.

3. Deep fried for 5 minutes on each batch.

4. Place on paper towel.Sprinkle with Parmesan cheese.

Marinated BBQ

This is just the same as Pinoy BBQ but just different style of marinade.

Ingredients:
1/2 cup red wine vinegar
1/4 cup soy sauce
3 tbsps. coarsely chopped garlic
2 tbsps. honey
2 tbsps. olive oil
2 tsps. black pepper
2 tsps. Worcestershire sauce
2 tsps. A1 sauce
1/2 tsp. salt
1 tbsp. of crushed pepper or cayenne pepper
2 lbs. sirloin steak, jerky style

Procedure:

1. In a large bowl, mix red wine vinegar, soy sauce garlic, olive oil, honey, black pepper, salt,
Worcestershire sauce, A1 sauce,onion & cayenne pepper.

2. Add steaks marinade & turn to coat. Cover & chill for 30-1 hour or if desired to 24 hrs.

3. Pierce into skewer.

4. Pre-heat grill, cook til done.

Twice Baked Potatoes

Ingredients:
6 large baking potatoes
1/2 cup butter, softened
1/4 cup milk
3 tbsps. crumbled cooked bacon
3 tbsps. coarsely chopped garlic
3 tbsps. coarsely chopped onions
2 stalks green onions/chives, chopped
1/2 tsp. salt
1/2 cup shredded cheese of your choice
cheese for garnishing
pepper and paprika

Procedure:
1. Wash potatoes, scrub and prick then dry with paper towel.

2. Covered with foil individually, add 1 tbsp. butter on each potato & bake @400* for 1 hour.

3. Let it cool on a wire rack foiled open and gently cut top .

4. Scoop out pulp and place in a large bowl. Do not throw potato shells!

5. Mash potatoes & butter.
6. Blend in milk, bacon, onions, garlic, green onions or chives, salt, pepper & cheese.

7. Refill potato shells with the mixture.
8. Top with remaining cheese & sprinkle w/ paprika.

9. Bake @ 375* for 25-30 minutes or until heated through.!

Chocolate Domingo Cake

I got this recipe from the book called "The Cake Bible" by Rose Levy Beranbaum.
I chose this one coz it looks yummy & easy to make and my kids love chocolate.
Just made this yesterday for my hubby's b-day:) I added pecans coz he like pecans!

Ingredients:
1/4 cup + 3 tbsps. Unsweetened Cocoa
2/3 c. sour cream
2 large eggs
1 1/2 tsps. vanilla
1 1/2 cups + 1 tbsp. sifted cake flour
1 cup sugar
3/4 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
14 tbsps. unsalted butter
powdered sugar for coating
chopped pecans or walnuts (optional)

Procedure:
1.Pre-heat oven to 350*. Lightly floured & grease a 9-inch Springform pan or 1 9x2" cake pan.

2. In a medium bowl whisk together the cocoa, sour cream, eggs & vanilla until smooth.

3. In a large mixing bowl, combine all the remaining dry ingredients & mix on low speed for 30
seconds to blend.
4. Add the butter & 1/2 of the cocoa mixture.

5. Mix on low speed until the dry ingredients are moistened.
6. Increase to high speed & beat for 11/2 minutes. Scrape the sides.
7. Gradually add the remaining cocoa mixture in 2 batches, beating for 20 seconds after each
addition to incorpporate the ingredients & strengthen the structure. Scrape down sides.

8. Scrape the batter into the prepared pan & smooth the surface w/ a spatula.

9. The pan will be about half-full .

10. Bake 30-40 minutes or until toothpick inserted comes out clean & the cake springs back
when pressed lightly in the center.

11. Cool cake in the pan on the wire rack for 10 minutes.

12. Loosen sides with spatula cool completely.
13. And now for fun, make a cut-out clover, cloud or star and arrange on the top of the cake
then dust everything with powdered sugar.

Mashed Potatoes

I learned how to cook Mashed potatoes when I live in TN. I love it!


Ingredients:
8 potatoes, peeled & rinse
4 tbsps. butter
1/4 c. milk
1/4 cup sour cream
dash pepper & salt

Procedure:
1. Boil potatoes in a pot.
