Roast Chicken

it has been a long time since I made my own baked chicken.Anyway as you noticed I didn;t have all the step by step pictures because i was talking on the phone while making it hahahaha!so i forgot to take pix. anyway here's the recipe:)


****Roast Chicken****

Ingredients:
1 whole chicken
12 stalks of green onions, ends cut, and chopped into 1/4" long
6 garlic bulbs, peeled
3 lemon or orange slices
2 tbsps. thyme
2 tbsps. marjoram
2 tbsps. parsley
2 tbsps. salt
2 tbsps. black pepper
2 tbsps. crushed red pepper
MSG (optional)
2 tbsps. lemon juice
1/4 cup butter melted

Procedure:
1. Clean chicken by taking the insides and rinsing thoroughly.
2. Place in a roast pan or broiler pan. (I used Broiler so it won't get soaked by it's juice) or you
can also use the rotisserie just follow your manufacturer's direction.
3. In a medium mixing bowl, combine thyme, marjoram, parsley, salt, black pepper, red pepper,
and MSG.
4. Rub thyme mixture all over the chicken and put some the insides too.
5. Stuff chicken with green onions, garlics, lemon or orange slices.
6. On a small bowl, combine melted butter and lemon juice.
7. Baste chicken with the melted butter and lemon juice mixture.
8. Bake for 1 hour @ 350*F.


9. After an hour, check the chicken's temp and baste with more of the melted butter and lemon
juice mixture.
10.Bake for another hour or until temperature reached to 180* or more.
11. Carve and serve.
Serve with the side dish Asparagus

Chicken Kiev

This is my own version of Chicken Kiev.Cooking chicken on the same way is just tiring!this is another way to treat your family.It maybe a little work but there's none better than home cooked meals made with love lol char!!! anyway, sorry if it's been a while since my last recipe post! you know been busy lately with all other posts lol! try this one it's very good. you can choose your filling but this is how I made mine. Sometimes I experiment by adding bacon on it or sometimes I substitute butter to blue cheese !Try this one and tell me about it! mwah

****Chicken Kiev***

Ingredients:
8 skinless, boneless chicken breast halves
1 tbsp. green chopped green onions ( 1 stalk)
1 tbsp. snipped parsley
2 garlic cloves, minced
1/4 cup fresh mushrooms, cut into halves for filling
1/4 cup mushroom for topper
2 tbsps. crushed pepper
3 tbsps. finely chopped sweet onion
1/4 lb. of butter, cut lengthwise
2 beaten eggs
2 tbsps. water
1/4 cup all-purpose flour
1/4 cup fine dry bread crumbs
1 tbsp. butter
1/4 cup cooking oil

Procedure:
1. Rinse chicken, pat dry.
2.Place each breast on a flat surface and cover with plastic wrap.

3. Pound lightly until flat using a meat mallet or a heavy jar.
4. Remove plastic wrap and sprinkle with salt and pepper

5.In a large bowl,combine parley, pepper,green onion,onion,mushroom and garlic.


6. Cut chilled butter into 8 sticks.
7. Place 1 tbsp. of filling mixture into each of the chicken breast.

8. Top with stick of butter and fold, jelly roll style.

9. Press edges and secure with toothpick.

10.Meanwhile,on a smaller bowl,stir together the eggs and water.

11.Coat chicken w/ flour, dip in egg mixture, then coat w/ bread crumbs.



12.Cover and chill for 2 hours or overnight .

13.In a large skillet melt the butter and add oil.
14.Fry chicken rolls 2 at a time.

15.Cook over medium heat, about 5 minutes or until golden brown.
16.Transfer to a rectangular baking dish.

17.Top with the remaining Mushrooms (optional)
18.Bake @ 400* oven for 30 minutes or till chicken is no longer pink and reads 180*

19.Spoon drippings over roll and serve with mashed potatoes or with Linguine or
Fettuccine and top with mozzarella sauce ( you can buy at your local grocer).

Fried Chicken

I love chicken and the easiest way to do it is frying it!Although I still have problems in making a gravy using it's drippings,, I still love making fried chicken! usually i just dip it w/ hot sauce w/ ketchup or a combination of soy sauce and vinegar along w/ rice! here's my version of fried chicken!

***Fried Chicken***

Ingredients:
18 drumsticks ( u can also use thighs or breast)
1 cup flour
2 tbsps. salt
2 tbsps. black pepper
2 tbsps. MSG ( accent/vetsin)
2 tbsps. paprika
2 tbsps. crushed pepper
2 eggs, beaten
1 cup milk



******Procedure*******
1.In a large mixing bowl, mix all together the flour,black pepper, Msg, salt, paprika & crushed pepper. Set Aside.


2.In another large mixing bowl, combine the beaten eggs and the milk. Mix thoroughly.

3. Wash chiken pieces and put in a plate.

4.Dip 2 chicken pieces in milk mixture then coat w/ the flour mixture.

5. Deep Fry for 10 minutes.

6. Check temperature. For poultry it should read 180*. Put in deep fry again if it didn't reach 180*.


7.Drain oil in a paper towel and serve!

Popcorn Chicken

**Popcorn Chicken**
I made this one when I was running put of idea on what to fix. so here's my own version of popcorn chicken!

Ingredients:
9 chicken breast (boneless, skinless) cut into bite size
1 cup flour
1 tsp. black pepper
1 tsp. crushed red pepper
1 tsp. paprika
1 tsp. parsley flakes
1 1/ tsp. salt
1 1/2 tsp. MSG( optional)
2 eggs, beaten ( put in separate bowl

Procedure:

1. In a large bowl, combine the flour, black pepper, crushed pepper, paprika, parsley flakes, salt
& MSG . mix well.

2. Rinse Chicken and dip each batches on the egg , coat with the flour mixture & deep fry for 5
minutes. try using a big slotted spoon as a guide for batches.

3. Check temperature it should read 180* then deep fry for another minute. serve

Chicken Stir-fry

one day I had a hard time what to make for supper but I got creative:) this one really taste good!! there's no exact amount of ingredients so just eyeball it like I do okay? but I will write the measurements for guidance:)
*************Chicken Stir-Fry******************

Ingredients:
2 cups shredded cabbage
2 cups carrots, cut into lengthwise
1 green bell pepper, cut into lengthwise
1 red bell pepper, cut into lengthwise
5 stalks of celery, sliced
1 medium onion, sliced
3 garlic cloves, chopped
1 lb. chicken , cut into servings
1/2 cup soy sauce
1/4 vinegar
pepper and MSG ( optional) for taste
1 tbsp. oil (for marinating)
1 tbsp. oil
Procedure:

1. In a 1 gal. freezer bag, put in soy sauce, vinegar, oil, pepper and MSG(optional).

2. Add chicken and shake it to soak the chicken. Marinate for half hour to 1 hour.

3. Cook fry chicken until done. Check the chicken, it should be 180*. Set aside,
4. Heat oil, saute garlic and onions.
5. Add the rest of the ingredients cook until tender crisp.
6. add in cooked chicken and stir-fry. season with salt and pepper if you like.
7. Serve with rice.

Lechon Manok Kawali

This is my version of Lechon kawali chicken style lol!!!! so eyeball the ingredients peeps...

Ingredients:
left over chicken
1/2 cup chopped onions
4 cloves of garlic, finely chopped
6 stalks of green onions , sliced into 1"
soy sauce, vinegar and other seasoning of your choice

Procedure:

1. Sautee' garlic & onions in a skillet until transparent.

2. Add the chicken & stir-fry until thoroughly heated.

3. Put in green onions and Stir.

4. Season with soy sauce & vinegar let it simmer then you can also add any seasoning you want to suit your taste.

Easy Chicken Salad

I always like to make this one when I have a left over chicken! & when I get too lazy to cook for a big meal! sometimes it's good when you make this as a pita filling!!!!:)So easy to make obviously!
*** Easy Chicken Salad***

Ingredients:

1 cup shredded cooked chicken
2 stalks celery sliced
1 tablespoon mayonnaise
1 tablespoon sour cream
Pepper to taste


Procedure:

1. Mix chicken, celery, mayo & sour cream.

**** if your too lazy to make your own chicken just buy those fully cooked ones in your local grocer!!!:) i do this all the time lol!!!********************
