This is my entry for Orangy Sunday! I made my own pumpkin pie just this last Thanksgiving and it was delicious! I am not only saying that because I am bias to myself but really, I was even surprised that it turned out really good! My husband who is very hard to please even loved them. He was skeptical of me making it because he doesn’t eat other people’s pumpkin pie aside from his grandmothers! He tasted his mother’s pumpkin pie and never liked them and so he never tried other people’s pumpkin pie because he don’t want to ruin it for him. But, I made mine and he loved it.. fine he said that it is the closest taste he ever tasted and I am happy with that.
What I really want to say is that I know he like mine better because he couldn’t even stop eating it! He just don’t wanna admit it ^-^.

Weary

My energy is somewhat drained from all the activity yesterday, I am in need of a wonderful& hot bubble bath! I cleaned my house ( Which, I need to clean again!) even cooked me some delicious dinner. I found the recipe @ Bon Appetit and I loved it! I actually started cooking that in the afternoon before I picked my children up from school because I know the rest of my day is going to be busy.

I didn’t have enough time to leave it in the oven for 45 mins. so I ended up transferring it to my slow cooker because I don’t want to experience another kitchen fire! I had to do it because we needed to go to my children’s school for the Halloween walk-a-thon. When we got to the school, there were lots of children with parents already. Some of them finished their laps and painted a pumpkin .Most of them are wearing costumes.. there were lots of witches, there was a ninja, a biker who wore cool helmets like those awesome gmax helmets, there was an Obi-Wan Kenobi, there was a mustard, a 3 headed kid, skeletons, vampire( my daughter was one of them), grim reaper ( my son was one of them) and of course super heroes & princesses! It was a fun activity for the children. I think we stayed there for almost 2 hours. It was fun and the weather was perfect! I really wish that it will stay this way til the actual Halloween comes because I want my kids to enjoy wearing their costumes while trick or treating without freezing! That’s not asking too much right?

Tomorrow is Monday and it’s time to go back to work once again! Tomorrow will be a whole school hours for kids also and I really hope that they are in the mood! Last week was the first week of school and students get out an hour early which was nice but going back to normal time would be best for everyone. I have been sleeping good and waking up early which I really like because I am able to make and eat breakfast with my kids everyday, although I take days off on the weekends to gather more beauty sleep! One thing that help me sleep is listening to an audiobook on my 2gb ipod shuffle. I have the Grimm Brother’s Fairy Tale downloaded and it is packed with 33 stories and so far I listened to 5 of them already. trust me, listening at night helped me snooze better than staring at my ceiling!
Anyway, last week I made this Apple Cheesecake and yes I tried a little bit as usual just to taste and see if I did a good job and so far that was my husband’s favorite cheesecake that I made.

Anyway, today is Sunday and here’s my entry for Sunday Stealing!

1. If you could live in any other time period, which would you pick?
* I think I like our period better just because of the diversity and acceptance of different races but I like the idea of the old timers way of living and simplicity
2. What is your favorite topic to write on your blog other than a meme?
* Food! lol I like cooking and I always like to learn more and even look at other people’s creation.

* Understanding and Honesty.
4. Could you adjust to life in another country?
* I was born from another country and I adjusted just fine and I know I can do it again if I have to move somewhere else!

* SD card!

My house is noisy! There’s 2 fans running one in the kitchen to take the burnt smell away since I almost put my house on fire (AGAIN!) and one in the bathroom to mellow the fumes of chemicals I put in the drain. My washer and dryer are beeping too and so as my cellphone! I never even have any radio on but I am widely entertained by the sound of cleaning progress!

My kids are in sync by wearing blue today! All of them! They got their blue jeans and blue shirts on since they have this thing called Blue Day at school and I have no idea on why but hopefully they wouldn’t start color coding the days! My eldest son who is in middle school thought it was fun so he wore blue anyway and the weird thing is that while I was typing I actually took the time to look what I’m wearing to see if I’m wearing anything blue which thankfully not!!

Moving on, I found me another meme this one is called Friday Fill-in and here’s my first entry!

1. I can’t believe it’s April already yippee!.

2. I think I will buy mrs fields sugar cookies for everyone today.

3. How can I take this burnt smell out of my house!.

4. Baked Swordfish with roasted peppers served with couscous was the last thing I cooked although I cooked it longer than suggested and in different temperature because I’m a rebel that way but it was delicious! I mixed olive oil, parsley, a little soy sauce, a little sherry and pepper in a small bowl and brushed the marinade on the raw fish and cooked it 20 mins. in 400 *. I bought the fish from Trader Joe’s it was money well spent and I will actually go there today to get me some of those fish! Here’s the pic take a look!

6. Not washing hands after using the toilet; is a big nonono!

7. And as for the weekend, tonight I’m looking forward to watch Late Night with Jimmy Fallon, tomorrow my plans include sleeping late and Sunday, I want to eat at Huhot!

I miss San Diego for many reasons! First the weather, then the beautiful scenery next the food! You can eat almost every type of cuisine there is! My favorite one would be the Italian, Mexican,Japanese and Filipino foods of course! I didn’t know how to cook then but I didn’t have to worry either! If I want Filipino foods I can just go to a small restaurant and fill my indulgence without worrying what recipe I screw up! If you ever visit places like San Diego you might as well get your weight loss pills ready coz it’s a haven for cuisines! I miss the beach, the malls and yes even the clubs!

It’s so different here in NE, we hardly have lots of places but it’s plenty enough! We don’t have any Filipino store or restaurant though so we usually buy stuff at Asian store and I am lucky enough to get Milk Fish and Pancit Canton at Jung’s Oriental Store! Don’t get me wrong I like Lincoln a lot, it’s a safe place to live plus my kids love it here but I really hope that one Summer we can go to San Diego and bring my kids to the Zoo and the beach San Diego is a beautiful place and I miss it A lot!

So Frigid

It is a frigid winter weather in Nebraska! It is currently 4 degrees and tomorrow will be gelid as well. The 1011 news even labeled the days as arctic blast and it definitely is! However, in my opinion this winter is a much better one compared last year when there were a lot of accidents all over Nebraska. There were many fatalities especially in the interstate and it was awful. Not a day past that I never heard ambulance glaring past almost every street in Nebraska. Some had minor accidents though caused a big icy traffic delay and some had serious accidents that you can see paramedic rushed with their medical equipment to help the people who were involved in some tragic accident.
Though winter can be bad but it does bring wonderful moments. Aside from the Holidays that gave everybody a cheer, there are moments when a simple snowball fight memories can be a gem. Making snowmen and snow angels are something not only kids enjoy but can give adult some merriment that would last for years. Winter also bring us some wonderful scene . A winter wonderland my girl whispered in my ear. Also winter make us enjoy simple comfort food like roast and stews , snuggles and movie nights are also in the list to do.

Winter maybe a discomfort and cold but winter brings families together in festivities with love and mirthfulness!

It’s Coming

I saw this at 1011news and I can bid goodbye to 40′s temp for the rest of this season! Our winter has been mild and I knew that heavy snowfall will be coming soon! Here’s comes the cold again and I have to prepare to keep me warm and comfortable. Thick jacket? √, Scarf? √, compression stockings? √ earmuffs?x. Now that I have to buy but I have something to cover my nugget but not as cute and as comfy as my daughter’s earmuffs. Oh well, I’ll get me some one of these days.

Anyway, I have been very busy today mostly in cooking! We are actually trying to stick into homemade meal as much as we can that way, not only it’s healthier for us but definitely it’ll save us some $$. Also there’s nothing like a home cooked meal

prepared with love:D I made this succulent pot roast served with delicious corn bread and for dessert? I made this Lemon cake which hubby actually liked! He didn’t like lemon cakes but he actually had a second batch:D The lemon cream cheese frosting was my kids favorite 0_0. It was delicious and had this tangy sweet taste that I can’t stop dipping my finger into the mixing bowl!

I’ve been on my feet all day but definitely worth the trouble.. not that it was a problem in the first place @_@ .

What’s for tomorrow’s dinner? I don’t know yet but I definitely have to do something with those drumsticks in the fridge!

Too Sweet

My kids had been asking me to bake them a cake and I finally made them one a while ago but as much as they like what I baked, I didn’t care for it! I only took one bite and I couldn’t eat my piece coz it’s too sweet for me! I started to think that they only said it’s good coz they don’t want me to feel bad but they eat more than 1 piece so probably they really liked it still… I.. the baker doesn’t care about the cake I baked! I haven’t been eating a lot lately and believed me I am not taking anything like lipozene (even though I wanted to) but I noticed lately that my tastes has changed. Any food that I enjoyed all my life and what I thought was good is no longer desirable to me. I see this as a good thing but a bad thing also! It might help me to chop off excess weight but I don’t like loosing somethings that I like! Plus change… only causes problems!

Baking Time

I promised my kids that we will bake something this weekend and I guess we will be digging some recipes in the cookbooks what to bake for dessert. I know that I should be more focus of running in the treadmill rather than baking dessert but my kids love my cooking so I can still do my work out and not spoil everybody’s love for appetite! In a couple of minutes and it will be the 1st day of May and I am very excited for that month! May is my favorite Month for some reason! I am not very sure on why since there’s nothing very special in that month but eversince I was a kid May was always my favorite! Anyway, next month we have many appointments. I have to enroll Ethan to his Karate class and I am thinking about putting my daughter into a dance class and I still don’t know what Shaun would want to do but there’s something for him. Also next month will be my daughter’s orientation for Kindergarten:D We are very excited for her to go to K but she is skeptical because she don’t want a new teacher she said she wants her pre-school teacher to be her kindergarten teacher. Anyway tomorrow is a new day I do hope that the guys will come by in our house and start tiling my wall! I really ant it to finish and I am also looking forward for Cinco de Mayo!! Have a great night!

Nom Nom

I can’t wait for Thursday because it is our Mexican night! Rolled Tacos are just delicious and as well as my favorite Fish taco with lime! We always look forward every week for that. Me and my husband started eating Mexican foods when we live in California and when we moved here in Lincoln they only have one place that serves delish Mexican food like Roberto’s and Filiberto’s in Cali and it’s called De Leon’s here in Lincoln. We have been ordering from this place since 2002! Imagine how many Mexican food we have eaten and sometimes we eat more than once a week too! Mexican food is like my best migraine treatment since I feel better every time I eat some! well, now I have to force myself to eat some store bought frozen rolled tacos and I am telling you, it’s disgusting but that’s what I got for now!
